With Virtual Machines behind a local bridge and NAT via pf :-)

Just installed a test VM with Debian Linux and it's working flawlessly.

I learned a lesson:

Don't buy a dual monitor mount. Buy two single monitor arms. Trying to work out if you can fit two monitors of a certain size is basically impossible without trying, and you're better off with two separate arms that can go anywhere you please.
