I've currently got a 2.8kw system and am upgrading it this year to a 16kw with a 32kwh battery. I'll use it to charge my ev (another purchase this year, possible changing both cars) and get a bidirectional charger installed so, when there is limited power in the grid, I can sell some of it back at stupidly high prices, including some from the car too. We use about 20-40kw per day (40kw only on really hot or really cold days), so should cover us for a while.
In case anyone wants cost breakdown, it's going to cost about $30k, and will pay for itself due no bills in a maximum of 8 years and a lot fewer if we sell spare electricity back to the grid.

Most users never use anything more than that and web-based apps will be more than enough for what they're likely to use. It's also ideal for those not tech savvy. Plus can use android apps too if needed so it can be used as a big tablet.
But of the 3, I'd probably chose Linux for them. But you'll have to expect to still be the tech support. That's why I say ChromeOS - it's used by kids a lot for a reason
Nah I get why - it's mostly a matter of perspective. Many had to deal with crappy school-supplied Chromebooks or the cheapest model their non-tech parents bought them for under $150. Or early models. And those were very poor implementations. Still are. I have a weak tablet style model and it takes a while to get going. My wife though, she has a Chromebook as her personal laptop, a higher end model from 7 years ago and it's still stupidly good and fast for a computer that old. But it also cost a lot more too - can't remember exactly how much but closer to $500-600 range. Was pre-Chromebook+ but all the specs were above those requirements. She uses it for browsing and web stuff primarily and it only ever causes issues when she forgets to update it for a few months and then wonders why she can't video call her parents.
If all you've used is a shit one, you're going to assume they're all shit - it's unfortunate that they "can run" on a potato and they sell them like that too which they really shouldn't. I think you need to address why cooking sucks for you. Do you know how to cook properly? My wife isn't a big fan and that's mainly as she doesn't know what goes well together and doesn't know how to use herbs and spices so needs recipes to tell her how to make most foods, especially initially.
It's quite easy to throw something healthy together. Eg. Had a chicken breast, stir fry veg and rice meal tonight. Rubbed a spice mix on the chicken and threw it in the air fryer for 20 mins, cup of washed rice in some water (to just over top of finger nail) cooked covered on low for 12 mins and left to steam for 5-10mins with cooktop off and then fry up some pre-cut stir fry veg - convenient, quick and not much more expensive. Throw a sauce like chutney or honey-soy (or bbq) on it and happy days. Doesn't have to be hard, doesn't have to cost a lot, doesn't have to take long and doesn't have to be bad for you. But this is something I would do, my wife probably wouldn't.
Sitting down with the family and eating a meal is also good bonding time and helps mental health.

And sometimes I just can't be arsed to cook so we have cheat meals (bowl of ramen, sanga, something on toast etc.) but it's always a good feeling, both physically and mentally, to prepare a meal and eat it. Honestly, it's the mental side that is most important in this. You can eat healthy out (assuming those making the food are using quality produce) but it's a) going to cost a lot which is another mental drain b) doesn't give you the dopamine hit of making something great yourself so it's another mental drain.
