  • At best you’re gonna be able to get them to stay off while you’re home. They’re inquisitive toddlers with a 4-foot vertical jump. You shouldn’t be making food directly on the countertop anyway. Just clean your cutting/prep surfaces before use as a matter of habit, and if possible store them vertical (between the canisters and wall works for me).

  • Walls get dusty only to a very minimal degree because they’re vertical. Walls in the houses of people who smoke get smoky and also more dusty because smoke residue is sticky. If you want to spend time dusting, go wipe down horizontal things where the dust is actually visible and annoying, and don’t worry about your walls. Once the second dust particle lands on the first, they’ll both fall to the floor on their own.

  • Well this is far from the official fancy version but basically I roast the duck on a rack in a deepish roasting pan with Lawrys seasoned salt, some five-spice or pie spice, and about halfway through I pour the thawed but not diluted concentrate over it. Baste as it caramelizes to glaze the bird, and when it’s done pour all the dripping into a gravy separator so you can leave most of the fat behind. The cooled fat goes into the freezer. It’s very nice useful fat but you won’t want any today, because your whole house smells like duck.

  • If you mean that the way I think, in Los Angeles when you’re going to make a left turn at a light without a red arrow, AND there’s enough clear road ahead on your left for you to turn into, you’re expected to “post up” into the intersection while you wait for opposing traffic to clear. Which often it never does until the light turns yellow, or even red. Then you’re expected to make your turn on the red, and the car behind you is allowed to follow you if they’ve got their front wheels over the line into the intersection. The cross traffic has to wait until you’ve cleared the box. “Two cars on a red.” Of course if it’s an especially large intersection, it’s possible for the first car and second car to post up so far that a third car can get those wheels over, and all three can make their escape from the box after the light changes. But the cross traffic considers this rude.
