I have 8 stand-alone PCs at home on a 500MB data line.
The PCs are i9-9900 64GB RAM 1TB NVME.
I would like to explore the running of a Full Node on one or all (if possible and worthwhile) of the the machines.
These machines are not used for anything else.
Also I would like to do some sort of entry-level mining to/or with these machines, if possible.
Any pointers please?
Where do I start?
What am I missing?

If you need any support about Bitcoin mining, you need to ask it in a right board then there will be more chances of getting good answers about mining.

What do you mean by worthwhile? If you mean earning Bitcoin only from running full node, then you should know Bitcoin doesn't reward people who run full node. Full node usually done by people who want better privacy, connect to other nodes or have full blockchain copy for other purpose (such as running self-hosted explorer).

First of all, read this thread BITCOIN MINING INTRO & RULES OF THIS SUBFORUM - READ BEFORE POSTING. If you  aware making profit is impossible and still want to try mining the hard way, read [Guide] Solo mine testnet bitcoins with bfgminer, Bitcoin Core, and a CPU/GPU.
