What is available at the moment is to use the category parameter of the [lifterlms_courses] shortcode, like in [lifterlms_courses category="example-slug"]. In this workaround, you’ll need to create a corresponding course category for each level of course difficulty.
On the other hand, if that is not a workaround that fits your needs, you may need to submit a feature request, as documented in lifterlms.com/docs/can-submit-feature-request.
