How to choose the right web hosting for WordPress?

Hi,
There was a part on wordpress.org with video tutorials about 1 year ago. I watched a video there that gave me great tips for choosing a web hosting plan (considering the size of the website as well). this section on wordpress.org seems to be gone now
anyway, I want to transfer my 4 websites to another hosting provider. So far, I have some ideas but I need some guidance that is up-to-date and in depth
I am pretty sure on the domain name registrar. I will use their DNS too. But where can custom domain email addresses be hosted?
because currently the domain email addresses are hosted on the web hosting but I saw domain name registrars that have email hosting too
also, with WordPress I have failed 4 times in having WordPress using Plesk (it would create millions of temporary files by itself and the web hosting did not know why and so i was left in removing WordPress)
but i do not want to use a WordPress hosting as I want the websites to be with a very secure hosting
I found Plesk very complicated but i have a course by Plesk that explains things so I hope I just need to get used to Plesk. plesk or cpanel? which one should I choose or another alternative?
are plesk and cpanel offered on VPS dedicated hosting? the old hosting was with ASP.NET and Plesk. also windows or linux OS for web hosting? how to choose?
I used a cloud hosting too and that was very expensive, great service but I am not sure it was as secure as it could have been. that web hosting company only deals with WordPress websites
I will be shopping for a web hosting soon for:
- 4 websites (1 with a 4-language woocommerce with a few products, the other 3 probably as one-page websites)
- is VPS dedicated hosting a great solution for WordPress? I would like for now to move from a shared hosting to a dedicated hosting without a very expensive price
- I will keep the domains registration separated from the web hosting company
- i would like to create about 5 custom email addresses and then use them through a free email client
- I am looking for a web hosting that is very fast and extremely secure and with a knowledgeable customer service (currently they are not, i can tell they are not, most of the times they either reply with “I do not know why there is this issue” etc. or they mainly answer when it comes to updating account details)
- i would like a web hosting with an easy and fast way to update all account details
