Adding new schema types missing from Schema plugin

How can we use this plugin to add new Schema.org Types e.g. https://schema.org/Menu to our WordPress sites, if we wanted to format Food Menu for example?

Is there any Schema plugin that allows to grab the format from Schema.org so we can leverage it within a Schema plugin/or within WordPress?

I’d assume this will need some Custom Fields to be created and mapped to the schema parameter and AFAIK this can only be done via code, unless I am wrong if anyone can confirm?
