This is a Windows-based application with the Linux source code available. In Mac, you will need to install virtualization software or install Windows if you want it to work.
Just open an .e2p file, then use File > Save Device As.... Select .hex as file format and type a name for the file you're going to save. The output result will be saved to the HEX format.
