Icedream mix must be drained from machine every night so machine can be cleaned and sanitized.
Press WASH on each side of control panel to start wash cycle.
Run wash cycle for approximately 15 minutes.
Remove contents of equipment holder.
Slide equipment holder up to remove from brackets on side of ice cream machine and take to compartment sink for cleaning.
Remove hopper lids, hopper gasket, mix feed assemblies, and front drip tray.
Drain all Icedream mix from ice cream machine into a clean and sanitized 12 qt container. If appropriate to store in walk in cooler for use the next day, refrigerate leftover mix in dated and labeled container.
Pour 1 bucket of clean lukewarm water into each hopper.
Use hopper brush to scrub sides of hopper until all residual Icedream mix is removed.
Be sure to scrub sensing probe on rear wall of hopper.
Use mix inlet hole brush to scrub mix inlet hole to remove any product residue.
Press WASH on each side of control panel to start wash cycle.
Allow water to agitate in freezing cylinder for a few minutes.
During this time, pour an additional bucket of clean water into each hopper.
Begin to drain rinse water.
Continue pouring buckets of clean water into each hopper and allowing water to run through ice cream machine until rinse water runs clear.
Pour sanitizing solution into hopper.
Use hopper brush to scrub hopper with solution, taking care to scrub sensing probe on rear wall.
Drain all sanitizing solution from ice cream machine.
Clean and sanitize each spindle on front of ice cream machine.
Now you may remove all parts from the machine.
Carefully take parts to be washed
Once cleaned. Lay parts on a clean red tray to air dry.
