having some of the animals being non-sentiant for food does make for a good way for predators to eat meat.
You might even be able to have your characters visit a fish farm, or a chicken farm, to show this in story.

I certainly enjoy it. And the Zootopia example was recently complicated but formerly had a good explanation for food. Reptiles used to be on the menu and solved a lot of problems. Monitors were good as livestock. And if the reveal is any indication, birds will be taken away, but before that reveal, ostriches also made good food choices. Felines are obligate carnivores, they require taurine to live, making them less flexible than other species. Herbivores can also partake in meat, so there is some friendly social overlap.

Your world is built very well, and you have a large and diverse enough stable food industry to cover all your population.

I think the word you're looking for here is sapient.
Its agreed that most animals are sentient.
Its not a matter of semantics rather a lack of understanding by the writers of Sci-fi
Sentient is a term misused by the writers of Star Trek TNG so frequently that most people still misuse it today.

Yeah, sapience is the more modern take of what we used to call sentience, which now has a broader scope to its nature.

This is simply an expansion of one’s vocabulary.

There is one part that I think stands out when you attempt to have the predator-prey dichotomy and any form of ethnicization among anthro species or breeds is that a monolithic take on the former goes against the latter. At the severe risk of potentially colliding with racial stereotypes, the combination of both aspects would have distinctions unless the world ended up with more of a monoculture. A very modern take could allow that as a bigger global culture shift, but I think that's why I've avoided that P/p divide in HAM by assuming the anthropomorphosis allowed more omnivorousness across them.

If carnivores are in such small numbers, why do they even still exist? Are there carnivore-majority countries/places then? How did they even fare throughout history, like were there carnivore communities, were they engaging in some sorts of professions that let them thrive, were there times when they were seen in more positive light? Was there any group of herbivores that was regarded negatively as well? Perhaps attempts to exclude some as "not true herbivore".
